Cos was started in 1980 and is so called due to the initials of the surnames of the 3 founders – Giambattista Cilia, Giusto Occhipinti and Pinuccia Strano. The estate is based in the town of Vittoria in the Ragusa province of south east Sicily and was originally begun on a shoestring budget. Today, however, Cos produces some of the finest wines on the island from native grape varieties such as Frappato, Nera d’Avola, Grecanico and Inzolia. The Pithos Bianco is made from 100% Grecanico grapes from 25 year-old vines.
A pale yellow in colour. Aromas of apricots, melon and lime. On the palate, mineral and fresh with a resinous quality. Medium-bodied with balanced acidity. Further tropical fruit flavours lead to a persistent finish. Try with chicken served with black olives and raisins, roasted rabbit served with a salsa of toasted almonds, pine nuts and anchovies or pan-fried squid with lemons and pangrattato, a crispy topping of chilli, breadcrumbs and garlic.

“To make the Cos Pithos they age the Grecanico in an amphora for 7 months giving the wine an almost sherry like appearance, which may sound not particularly appealing but believe me it makes one hell of an interesting wine. I found lots of minerality and maritime characteristics, similar to those found in the finest Fino Sherry.
