Established in 1991, Cape Chamonix was originally part of the La Cotte Farm given to the French settlers in 1688. It has always had a reputation for the quality of its Chardonnay, due in part to the limestone soils located on the higher, most northern slopes of the crescent of mountains that encircle the Franschhoek valley. However since the arrival of young, German trained, Swellendam-born Gottfried Mocke in September 2001, the quality of their entire range has catapulted Chamonix to being, along with Boekenhoutskloof, a leading producer in the valley. The hand disgorged Blanc de Blancs Cap Classique, made in tiny quantities, is an exemplar of the quality wine produced by this estate.

Autolytic notes with a savoury smoky element in amongst the baked citrus fruit aromas, roasted almonds and honey. Great body and a fine creamy mousse lead to a fine and very long finish.

Some have no desire to seek certification or in some circumstances wish to reserve the right to intervene chemically as a last resort should it be deemed necessary.
