TERRIOR
At the heart of Roussillon, between the Mediterranean and the Pyrenees, vineyard is about 200 meters high, planted on black slate terroir.
GRAPE VARIETIES
Carignan old vines (around 70 years old)
WINEMAKING
Bush Vine, dry grown. Hand harvested. Cold maceration. Traditional vinification at 25°C for one month. Aging in large concrete vats for 12 months.
TASTING NOTES
Vibrant red, with dark berries and cherry notes and a subtle hint of smoked meat and a touch of pepper. The wine is intense, well balanced, with soft tannins and a fresh finish.
FOOD PAIRING
Pair with grilled meat, rich poultry (duck breast), or a chili con carne.
