Born with an inclination for metaphysics, Vasco thought of being an astrologer in his teens, then decided to become an architect. In his twenties he discovered Steiner’s philosophy which led him eventually to him starting a wine project in Casal do Paço in 2003 in a semi-abandoned property belonging to his family since the 17th century.
TERROIR
With exceptional conditions of soil and solar exposition, the vineyards lie on softly inclined hills looking over the Lima River. More than 20 hectares of an ecologically sound territory, rich in biodiversity, in which we find, besides the vines, forests with species of acacia, oak, beech, pine and eucalyptus, chestnuts orchards and a park of century old monumental trees. The vines of Casal do Paço are situated in a south facing amphitheatre, on gentle slopes, 1km north of the Lima River. Sheltered by hills and forests from the north and west winds, they receive welcome breezes from the south bringing the Atlantic influence that characterises the freshness of the wines.
VINIFICATION
• Fermentation with maceration in granite tanks and inox vats
• Foot treading
• Indigenous yeast
• Controlled ferment between 19C and 22C
• Malolactic fermentation
• Filtration
• Minimal use of sulphur in vinification to help preserve the wine
TASTING NOTE
Opaque violet in colour. The nose has aromas of red fruits with some vegetal notes, sour cherry and cassis and spicy and menthol hints. The palate is firm yet round with tannins prevailing and a crisp acidity that makes this wine enormously gastronomic and persistent.
FOOD RECOMMENDATION
Ideal with traditional Portuguese dishes as well as Italian, Indian, Thai and most spicy cuisine.
