This wine is a blend of 70% Sauvignon Blanc and 30% Semillon. The fruit was picked over three weeks to ensure that the wine would possess the desired combination of freshness, richness and complexity. The complexity of this famous wine style is also attributable to the marked differences between the characteristics of the Sauvignon Blanc fruit produced by the seven blocks allocated to this grape variety, which reflect subtle differences in their soil structure and composition.
TASTING NOTES
Straw in colour, with perhaps a tiny bit more cloudiness than the Parterre. At this stage, it’s a minerally, intricate style with citrus, green bean, peppery tomato leaf and vanilla oak aromas. On the palate, bath salts combine with lemon and lime to provide a good deal of refreshment. These flavours drift into a lovely lingering finish.
This wine is characterised by its subtlety and intricacy. It’s long, dry and fairly acidic, but there’s a welcome softness to the acidity. It’s precise and drinking very well now, but will also improve with time.

“It smells unreasonably oak-influenced – it’s spicy, creamy, cedary – and when you taste it, there is of course a lot of grassy, gravelly, pulpy flavour. The power of the fruit and the weightiness of the oak makes for a heavy wine, and when I first swallowed I didn’t think a great deal of it. Then a strange thing happened: the finish refused to stop.
